Sprouts and Microgreens
After I started this latest venture with sprouts and microgreens I got curious. How much nutrition are in these little microgreens and sprouts I’m growing? That’s what prompted my blog. I love to do the research and I’m a retired programmer with a minor in biology. Ok, so I said it, I’m a nerd. Anyways, I digress. So, as I progressed down this rabbit hole I began to think about what would my favorite doctor say about sprouts?
I decided to find out what my integrative cardiologist, Dr. Joel Kahn, MD, might have to say on the subject. After all he’s a vegan and strongly recommends a plant based diet for his patients. He didn’t let me down, I found not only what he thought about sprouts but he pointed me towards a book on the subject AND he’s quoted in the book. Whaddaya know?

Well, low and behold, my search turned up one of his many videos, a book review on The Sprout Book by Doug Evans. I bought a paperback copy on Amazon and soon as it arrived I started reading it. And I read it in less than 24 hours. Yes, it was THAT good. The focus was mainly on sprouting but there was enough about microgreens too that I didn’t feel the subject was neglected. Besides, many of my microgreens are sprouted in a jar before planting, so we’re on the same page.
I really liked the Resources (where to buy the seeds and stuff) and the Bibliography (lots of references) in the book, thanks for including them. Sprouting is not rocket science but until now there wasn’t nearly the information about sprouts and the nutrition in this miniature garden. It’s sustainable food, even in a food desert, even in the city, even in an apartment. Anybody, anywhere, can sprout. If you’ve been wanting to try sprouting or microgreens and need some help to get started, this book covers it pretty well. There’s even recipes in the back of the book, about 70 pages worth. I saw a number I’d like to try, like the Lemon-Lime Electrolyte Drink. I think sprouts go well with the foods I already eat, but I like to try new things too.
Speaking of which, I try to include in my post the ways I eat the sprouts I grow. I hope it inspires you and gives you some ideas. I have a thing for cookbooks, it seems I collect them and I’m still always hunting online for new recipes to try. I include a little of both, my recipes and links to other online recipes, at the end of my posts. The hardest thing is getting the photo before I start drooling. They say you eat with your eyes first. Enjoy!

Today’s lunch was egg salad with Curly Cress. I boiled 4 eggs, 2 Tablespoons Mayo (I use an organic avocado mayo), 1 Tablespoon Organic Dijon Mustard and a forkful of my homemade sweet pickle relish and a dash of salt.
Dr. Kahn sure has changed!
